GRAHAM FINGERS

1/2 cup butter

1 egg

1/2 lb. graham wafers

1/2 cup broken walnuts

1/2 cup sugar

2 tbsp. cocoa

Melt butter in saucepan. Add sugar and cocoa, mixed. Add beaten egg, bring to boil and simmer one minute. Add to crushed wafers and nuts and put in greased pan.

yumm.

Rosemary received this recipe from her friend Liz Storey in Piltown, Co. Kilkenny, in Ireland.

 

Swiss Roll tin lined with pastry.

Jam of any kind to spread evenly over pastry. Optional. you could add 1 tsp almond essence to jam if you like.

6 oz. melted marg.

6 oz. white sugar

2 large cup rolled oats

1 egg ( 2 if small)

Mix altogether and spread on top of jam.

Bake at 350 deg. for 20-30 min.

1 cup butter

1 cup white sugar

2 cup sifted flour

1 egg yolk plus the (white)see below

1 tsp. cinnamon

Mix together and spread in greased tin, about 8 x 11.

Beat egg white with a little sugar. Brush over base and sprinkle lightly with slivered almonds.

Bake at 375 deg. until golden brown. Cut while warm.

These are also called Dream Bars

1 cup flour

1/4 cup butter

small dessertspoon sugar.

Mix above ingredients and press into greased 8 x 8″ pan. Bake first at 350 deg. oven for about 15 minutes.

TOP

2 eggs

1 cup brown sugar

1 tbsp. flour

1 tsp. baking powder

1 cup walnuts

1/2 cup medium coconut

Mix all together and spread over base. Return to oven and bake @ 350 deg. for 15-20 minutes until bubbling and set.

You can dust icing sugar over the top before you serve.

NUT BRICKLE

4 cup rice krispies

1/4 cup melted butter

1/4 cup corn syrup

1/2 tsp. salt

1/4 cup brown sugar

1 1/2 tsp. vanilla

2/3 cup semi-sweet choc. pieces

1/3 cup choppped nuts

Place rice krispies in medium sized bowl. Combine melted butter, syrup, salt, sugar and vanilla, mixing until well blended. Add to cereal, mix well. Press into bottom of well-buttered 9 inch square pan. Bake in 400 deg. oven about 10 minutes or until lightly browned.

Remove from oven and immediately sprinkle with chocolate bits. Spread chocolate with knife as it melts, then sprinkle with nuts. Cool, cut into squares, chill until firm. Makes about 30 pieces.
