Soak together.

1 can crushed pineapple

1 pkg. Miniature marshamallows

Add 1/2 pt. Whipping cream (whipped)

some maraschino cherries ( some other colourful fruit)

Chill and serve.

CHRISTMAS BARS

Ingredients:

3 cup sifted flour

1 cup melted butter

1 tsp. Baking soda

2 eggs

1 tsp. Salt

3/4 cup buttermilk

2 tsp. Cinnamon

1 cup chopped candied peel & citron

1 tsp. Nutmeg

1  1/2 cup chopped cherries

2 cups lightly packed br. Sugar

3/4 cup coarsely chopped walnuts

Sift dry ingredients. Stir brown sugar into melted butter. Cool slightly. Add eggs one at a time, beating after each addition. Add buttermilk, sifted dry ingredients.  Add peels etc., Spread thinly. Bake 20-25 min. Cut into bars while warm.(4 doz. Bars) can dust lightly with icing sugar to serve.

2 egg whites

1 lb. Icing sugar (sifted)

juice of 1/2 lemon strained

glycerine to keep soft.

ALMOND PASTE

Ingredients:

1 lb. Ground almonds

2  to 3 egg whites

1 lb. Icing sugar

Beat egg very slightly and add other ingredients.

DARK CHOCOLATE CASHEW FRUIT CHEWS

Ingredients:

350 grams dark Belgian Choc. coarsely chopped

1 cup unsalted roasted cashews

1 cup dried cranberry

1/3 cup currants

Line a large baking sheet with parchment paper. Place choc. In heatproof bowl and set over simmering water. Stir and heat the choc. Until just melted. Remove from heat and stir in cashews, cranberries and currants. Drop heaping tbsp. of mixture on baking sheet, and put in fridge until set.

Lauren makes something like this with white choc. She puts in candy canes, broken and maybe almonds. Yumm. She puts it on one big tray in a slab and then when cool, she breaks it into small pieces.
