KISSES
2 egg whites
1/8 tsp. salt
1/8 tsp. cream of tartar
3/4 cup sugar
4 oz. semi-sweet chocolate bits
1/2 cup chopped walnuts
1/2 tsp. vanilla
Beat egg whites until foamy, then add salt and cream of tartar and continue beating until eggs are stiff but not dry. Add sugar, 2 tbsp. at a time, beating thoroughly after each addition. Fold in choc. bits, nuts and vanilla. Drop from tsp. onto ungreased heavy brown paper, set on a cookie sheet for easy handling. Bake at 300 deg. for 25 minutes. Remove from paper while still slightly warm.
COOKIE WREATHS
from Mrs. Stenvold. These are so pretty.
2 eggs,( save 1 egg white for dipping at the end.)
2 cups flour
1/2 lb. butter or marg. creamed with
4 tbsp. sugar
2 tbsp. cream or canned milk
2 tsp. baking powder
vanilla, about 1 tsp.
Cream butter and sugar. Add 1 whole egg and the other yolk, whipped together a bit. Add cream, flour and baking powder. Form rings with dough and dip in egg white which has been beaten slightly. Dip in granulated sugar and bake until a very light colour. 350 deg.
FAIRY CAKES
This sounds like a wonderful Christmas recipe, one of Grandma Ralfs. Get out your scale.
3 oz. butter
3 oz. sugar
2 eggs
6 oz. flour
1 tsp. baking powder
3 oz. currants or sultanas
Cream the ingredients together. Drop in tsp. on a well greased baking sheet and bake in a hot oven.
Dust with icing sugar if you like, when serving.
MRS. FRAZER’S ROCKS
When Mom and Auntie Margie were at Oaklands School, Auntie Margie was friendly with Clara Frazer. One day Clara brought this cookie to school and shared it with Auntie Margie. Auntie Margie brought it home to share with Grandma Ralfs and they loved it. Mrs. Frazer then shared the recipe with Grandma.
1 cup butter
1 1/2 cup white sugar
3 eggs
1 lb. dates, cut in small pieces or ground in meat grinder
1 cup chopped nuts
pinch of salt
1/ tsp. ground cloves
3/4 tsp. cinnamon
1 tsp. soda dissolved in 2 tbsp. hot water
2 3/4 cups flour
Whip the whites of the eggs separately. Mix everything in order. Drop the finished mixture on a baking sheet in tsp. mounds. Bake at 350 deg. for about 12-15 minutes or check on colour.
I think Mrs. Frazer rocks!
PEPPERKAKER (Peppernuts)
This is another recipe from Mrs. Stenvold. and yes, it has pepper in it.
1/2 cup syrup (Rogers)
1/2 cup molasses
1 cup sugar
1/2 cup butter or marg.
1 rounded tsp. cinnamon
1 rounded tsp. pepper
1 rounded tsp. ginger
1/2 cup sour cream(canned milk)
2 tsp. baking powder
3 cups flour or more if necessary
Heat the first four ingredients until sugar is melted. Warm slowly. Cool it.
Add cream, flour and 2 tsp. baking powder.
Make a nice soft dough. Roll thin and cut in diamond shaped. OR can be rolled in log, wrapped in wax paper and put in fridge overnight.
When ready, unroll and slice thin, bake in 350 deg. oven. Watch to judge cooking time.
