CHRISTMAS MORNING WIFE-SAVER

This recipe is from Elizabeth Bey and it is a regular Christmas morning breakfast for the family.

Make the day before and pop it in the oven in the morning. Serves 8

16 slices white bread, with crusts removed

slices of Canadian back bacon/ham

slices of sharp cheddar cheese

6 eggs

1/2 tsp salt

1/2 tsp. Pepper

1/ – 1 tsp. Dry mustard

1/4 cup minced onion

1/4 cup green pepper. Finely chopped

1 – 2 tsp. Worchestershire sauce

3 cups whole milk

dash red pepper(tabasco)

1/4 lb ( 1/2 cup) butter

special K or crushed corn flakes

In a 9×13 buttered , glass baking dish, put 8 pieces of bread. Add pieces to cover dish entirely. Cover bread with slices of back bacon, sliced thin. Lay slices of cheddar cheese on top of bacon and then cover with slices of bread to make it like a sandwich. In a bowl, beat eggs, salt and pepper.

To the egg mixture add dry mustard, onion, green pepper, worcestershire sauce, milk and tabasco. Pour over the sandwiches, cover and let stand in fridge overnight. In morning, melt 1/4 lb. Butter, pour over top. Cover with special k or cornflakes, Bake uncovered, 1 hour at 350deg. Let sit 10 min. Before serving. Serve this with fresh, cup-up fruit and hot cinnamon rolls.

BUTTERY ALMOND TOFFEE

makes 3 lb. Of toffee

1 1/2 cups(3 sticks) unsalted butter, cut into chunks, plus more for the pan

3 1/2 cups sugar

3/4 cup water

1/4 cup light corn syrup

1/2 tsp salt

2 tsp vanilla

1 1/2 cups whole almonds(about 9 oz.)

toasted and chopped

12 oz. Bittersweet or semi sweet chocolate, chopped

Lightly butter a 10 x 15 inch jelly roll pan.

MODIFIED SPONGE CAKE

(350 F oven) Auntie Margie

makes 2-8 inch round cakes

Dry Ingredients:

1 1/8 cup all purpose flour

2 tsp. baking powder

1/2 tsp. salt

Sift the dry ingredients (flour, baking powder, and salt) together.

4 eggs separated

1 cup sugar

1/4 cup cold water

1 1/2 tsp. vanilla

Beat the egg whites until stiff, gradually beat in 1/3 cup of sugar until peaks form. Beat egg yolks until thick. Beat in rest of sugar, water and vanilla. Fold the flour mixture into the egg yolk mixture. Fold in egg whites. Turn batter into 2 ungreased 8 inch round layer cake pans. Bake at 350F for 30 to 35 minutes. Cool 5 to 10 minutes and remove from the pans.

CRANBERRY TEA

Serves 10

Boil 2  1/2 cups of water.

Add 4 tea bags and steep for 5 minutes.

Add:

1 cup sugar

1 1/2 cups water

1 pint cranberry juice (2 cups)

1/2 cup orange juice

1/2 cup lemon juice

1/4 tsp. Cinnamon

4 cloves

When ready to serve, add an equal amount of water.

DEVONSHIRE CREAM SUBSTITUTE

4 ounces of soft cream cheese

1/2 cup whipping cream

2 Tbsp. icing sugar

1 tsp. vanilla (optional)

Beat the cream cheese until smooth. Add the other ingredients. Beat until light and fluffy.
